In order to preserve the natural properties of coffee before grinding, it is essential a properly storing. The acidity, fragrance, and aroma of a drink depend on the quality of the grain, but also on the method of packaging and the preservation.

Packaging: the key to fresh coffee

Coffee proteins react with oxygen on the air, causing that the natural fragrance and flavor to be lost when it becomes a beverage.

So it couldn’t be simpler: keep the coffee pack carefully closed!

There are countless hermetic jars on the market specially designed to keep coffee. They are inexpensive and decorative. You can also put the coffee in zippered bags or use specific tweezers to close food packages.

Use transparent paper film

If you decide to store the coffee in airtight jars, you must be careful with the number of beans/grind that is left over. Let’s explain:

When the coffee pot is full, there is very little air inside. However, when the can is halfway or less than halfway there, the air/coffee ratio produces oxidation.

Our star tip is to put a transparent cooking film on the surface of the coffee. Stick it on the inside walls of the can so that it comes into contact with the beans/grind. This way, the plastic will separate the air from the coffee and reduces the risk of damaging your drink.

Keep it refrigerated

High temperatures also facilitate the oxidation of the grain. Keeping the leftovers of ground coffee on the fridge will conserve part of its natural properties.

If you want to store it in the cold, use its original packaging and keep it in a zippered bag making sure there is no air left in it.

Keep in mind that you can only defrost your coffee once. If you put it back in the fridge, it will become tasteless the next time you use it.

Keep it out of the sun

Just as heat is a natural enemy of stored coffee, so is sunlight. If you want to keep it out of the fridge, be sure to hide it from the light.

If you want to keep your coffee in jars, make sure they have UV protection. If you don’t find one like this, wrapping them in cloth or grocery bags will be enough.

Tip 1: Grind the coffee yourself at the time of drinking

Roasted coffee beans preserve their aromas much better than ground coffee.

We know it’s a matter of convenience and immediacy that you buy ground coffee at the super. In any case, grinding the coffee just at the moment you are going to prepare the drink causes the aromas to be released during the extraction and not before.

Tip 2: Drink freshly roasted coffee

Green (i.e., unroasted) coffee can be drunk, but it is not that yummy as a regular roasted coffee cup. But, of course, the older the roasted coffee crop, the lesser its properties. So, the trick is clear as water: buy your roasted coffee as recently as possible.
